If you have the correct permissions, you can first cancel the sales order and then reset it to Quotation stage.  In the Quotation Stage you are able to change the client.

Caution: This only changes the customer name in the Sales Order; if you have linked tasks or projects, they are not going to be changed automatically so be careful when doing this.  Often it is just better to simply cancel the sales order and create a new one.
