The Backbone.js framework is only used for the Point of Sale of Odoo. The rest of Odoo uses its own JavaScript framework which is present in all Odoo versions (8-13). The official document explains quite a bit about it at  https://www.odoo.com/documentation/13.0/reference/javascript_reference.html and at  https://www.odoo.com/documentation/13.0/reference/javascript_cheatsheet.html.
Besides of the Odoo JavaScript framework you can use default JavaScript as you know it for a lot of things too by the way.
