The field "state" corresponding to the partners address is not included on sale and purchase orders. Can be this a bug or is it the common style address at odoo?

No it is not a bug,...
It is a feature :) in order to make printed address look like you want .. install module address_book..
upon install, it creates a menu under sales, wich is address book... there you can modify the address composition for your language...
(add fields , change the way of displaying etc.. )

Menu: Sale - Address book - Localization - Countries
here you can edit the way addres is written for specific country

Thanks for your answer. I had installed the module Address Book (Tech name contacts v8.0.1.0), but under sales-address book, I don't see the way to modify address composition. I have got this options on that menu: Localization -Countries -Country Group -Fed. States Titles Contact Titles Partner Tags Bank Accounts Patner Activations Banks Bank Account Types Sorry for my ignorance, and thanks of new.
