This is a feature of the Enterprise edition - see https://www.odoo.com/documentation/17.0/applications/finance/accounting/get_started/multi_currency.html#automatic-update - so with a subscription to that edition you can see the code for each API we connect to:
As per Ray's answer this is standard in Odoo Enterprise, and there is an OCA add-on for Community:
