If I change the invoice template in Odoo with the developer mode, will it affect old invoices that are already registered?
if yes, is there a way to change the template and that it just affects new invoices?

If i understand your question correctly, you want to print the invoice that is newly created to follow the newly changed one. and the old one to follow the default template?.
To answer your question is 'Yes' old invoices will follow the new templates.
My opinion is to duplicate the default template and change the new one for the latest invoices and the default for the past invoices. It is advised to always duplicate the default template and work on that one instead of the default one directly.
