In my company a period closure is made every month, and it is sought that once this has been done, it is no longer possible to modify documents of the period that has just closed. For example, you cannot edit or modify a document that is dated August / 2020

Is your question about Accounting Documents or Sales Order Documents?
Edits to Sales Orders never affect Accounting, it is just the corresponding Invoice that does.
Sales Order Documents:
LOCK the Sales Order and create (via attrs) an invisible condition on the UNLOCK button?

You can see that the domain for "Today's Activities" we use context_today() to get the current date.
