I have a Customer follow-up set up in version 12 and it works great.
I would rather have emails come FROM (and have Customers REPLY) to the catchall email address that I have for creating tickets in the first place.
How would this be possible?

I was wondering if anyone has an update here. I have follow-up emails being sent but I would like them to either be sent from a 'no-reply' email address or a specific users email address. Right now these emails are being sent from a 'catchall' email address so customer reply's go there. Is this possible through the UI or will dev work need to be done to change the email address?
Any update on this issue David?

I couldn't find the customer follow-up email template.
Sorry for my previous answer. It seems that Follow-ups doesn't use the email templates. They have their own templates in "Accounting/Configuration/Follow-up levels"
It seems that, in standard, it's not possible to change the From, and Reply addresses..
You can customize the email templates (Menu: Settings / Technical / Templates)
It is possible to change the fields FROM and REPLY-TO in order to fit your needs.
