In previous version (6.1 and 6.0) opportunities had a "company" and a "contact" so you were able to know which specific person inside the customer company should be contacted.

In OpenERP 7 opportunities only has a related company, it is not possible to know which person is the responsible in the customer side. This looks like an important feature as the customer company might have hundreds of employees and you won't know who to send the opportunities emails or calls, or with whom to book a meeting.

Would somebody help me better understand how this should be handled in OpenERP 7?

OpenERP 7.0 allows you to select a COMPANY, a CONTACT at a COMPANY, or a CONTACT:

Delta PC = company

Demo User = contact (not a great example, but an example!)

Delta PC, Richard Ellis = contact at company

This may not be possible with 'early' versions of 7.0 because I know there has been a lot of work done to address some issues with the way the model for partners changed between version 6.1 and 7.0.

I know it has been possible in the more recent builds to select all three combinations - and confirmed it works this way with today's build of 7.0.

When did you install 7.0? Have you updated?

It is definitely possible to select either a company or a contact, but I think the original question is if it possible to select a company AND it's corresponding contact, for example if having a large company in which you sell to different departments and people.

I clarified my answer. Yes this is possible.

This should be fairly simple to deal with under the circumstances Andres describes I think. Under the customer drop down list under new opportunity, you can create the customer as company or select the company (if you have already created it under customers) you transact business with, meanwhile, when creating the customer, you have the option to create contacts within the Company, and they all appear as customers except when you filter. You can therefore choose the contact you wish to correspond with easily I think. Hope this helps.
