I would like to use the Odoo like a what I see the Square product being used as. I would like to use the Odoo POS get a total, swipe the customers credit card and then have them sign their signature on-screen. Is this possible with Odoo?

It's possible except the signature on-screen part. You'll need to get the signature on the receipt. More details here:
