It is possible to define custom sequential numbers in Sales Order #, Quotation #, Invoice #, Purchase Order #, etc. of odoo community edition?

Yes. Enable Developer Mode and navigate to Technical / Sequences & Identifiers / Sequences
Note that invoice numbering now works differently. You enter the first invoice number manually, and Odoo will set the sequence numbering, but you can resequence (again in Developer Mode):
There is only one sequence number for both Sales Orders and Quotations. You can use Automated Actions to set sequence numbers and that might be a possible solution.
