We have two companies in our Database. 
Warehouse staff have access to both, to handle shipping. Customers and products are kept separately by assigning them to a company.  
I recently added the Knowledge App and was adding SOP's for one company, but the other company can also see them all. For now, I have added them in my own private folder and shared them. Has anyone else set up Knowledge app, so more than one company has it's own information?

You might be interested in this third-party module — https://apps.odoo.com/apps/modules/18.0/knowsystem — which allows flexible access to particular articles or groups hierarchically.
