Hello, how are you ?
I want to install Odoo Server 11 or 12 but i don't know what is the better environment to deploy it between Windows or Linux, can you help me ?

Please refer the below links for odoo installations:

1)Odoo 11: https://www.odoo.com/documentation/11.0/setup/install.html

2)Odoo 12: https://www.odoo.com/documentation/12.0/administration/install.html

Linux environment is better for odoo server deployment.

If you want to have the best chances for support and documentation, stay with the majority, in this case it means Ubuntu.
