Going for enterprise, does Odoo Studio work in the same way if I run it on my server, (on premise)? Will I have the possibility to use it on my own modules?

Odoo Studio will work with any version of Enterprise, on-premise or cloud hosted. Where/who is hosting does not change the functioning of Studio, only the version (Enterprise vs Community).
Studio will work on Custom modules, although some functions may not show by default, but being in developer mode of Studio should give you full access to everything.

Do I always need an active subscription of odoo studio to be able to work with the module developed on the studio?
Or once I develop it, can I make it work alone?
From what I have seen, if you make any customizations or custom builds using studio, studio is required to install. ie. If you build/customize in studio, then export, and import into another database, that database must have studio installed as well.
If you are familiar with module development, you can use the exported data to create a module that would work without having Studio installed. It will take a little work and editing the code, but is definitely an option available for you if you want to eventually eliminate studio.
