I would like to be able to mark certain projects and tasks in a specific color so I can easily identify them in a Gantt chart overview.

We can't able to give customize color in Gantt view.
Because,
Color coding of the summary bar is as follows:
* Gray shows that the resource is not allocated to any task at that time
* Blue shows that the resource is fully allocated at that time.
* Red shows that the resource is overallocated

Would you know then why in the rental app, I have multiple colors on the products in the Gantt View even if they are not allocated anymore ? With your description since they are not allocated, they should come back to gray ?
