But from what you posted, I think the key you are missing is that a "36-month subscription" is a single (1) item on the sales order.

You are selling ONE subscription. The Subscription knows how many months it is for.
What if the client needs two subscriptions - one for each employee:

On the sales order the quantity is what you invoice per month. So if you want to invoice 1 service a month, qty on the SO = 1. If you want the subscription to invoice for 36 months and then end, open the subscription after validating the SO and enter a end date which is start date + 36 months.
the subscription will automatically go into 'to renew' a month before subscription end. If subscription is not renewed, i.e. no new quote is created and validated, the subscription will automatically close at the end date and no more invoices will be created automatically.
