If you activate the developer mode of the Odoo, you can see the models and views under the Settings menu. You can see the models/database tables from, Settings -> Technical -> Database Structures -> Models and you can see the views from Settings -> Technical -> User Interface -> Views

If you are asking where the changes done from the front end or developer mode get saved, it is also get saved in the same. You can see the changes/edit made from the developer mode in the same path.
