Is it possible to view what sales order/manufacturing order stock is reserved for? I can see the total quantity of stock reserved, but sometimes we may need to see what it is reserved for and change the reservation when a higher-priority SO/MO is created.
Is this possible without a customization? Is this information even tracked?

This information is tracked in the stock.move and stock.move.line models. You can customize the Product Moves view (Inventory > Reporting > Product Moves) to display this information.
