Are there any config files I should make sure are up to date besides the main openerp-server one?

No. There are no other configuration files that control OpenERP Server.
There are the standard configuration files for PostgreSQL (nothing to do with OpenERP using PostgreSQL, the same configuration files for ANY PostgreSQL install)
Are you referring to PostgreSQL config files or OpenERP config files which relate to PostgreSQL?
