Hello @Shafraz,
total Global discount % and total discount value is not available in odoo default. In odoo default only discount per sale.order.line is available. for that click on Salesmodule->configuration->discount. after enabling this you will be available to do order.line discount.
If you need global discount then you verify the below paid module :-
https://apps.odoo.com/apps/modules/12.0/discount_sale_order/
