I can't understand how this works and how to properly configure this parameter.

I suppose you mean the Routes on Product Categories.
You can define routes on warehouses, product categories, products or sales order lines.
Routes define whether a product is purchased or made, and whether it is make-to-order (MTO) or (MTS). You can also setup other routes.

If you have some products that you manufacture, and others that you buy (or some MTS and some MTO), you could assign them to different product categories and that simplifies the process of setting up new products.
