Creating a Product the "Responsible" has been set to the current user. The "Responsible" "Verantwortlich" will be displayed in List mode.
How to change/assign a new the responsible to reflect organizational changes?

You can change the Responsible in product form view in Inventory Tab under Logistics section. If you want to modify it for more than one product you can export the products and fill the responsible and import it again or you can use mass edit in list view, just filter the products you want and then check select all products checkbox and then change the responsible for one of the record and you will get a confirm message if you want to apply it to all selected products.
BTY, the responsible field as per Odoo description is the user will be responsible of the next activities related to logistic operations for this product.
Thank you for your suggestion, however in the inventory view the relevant products are not listed, as they are services (no warehouse count).
This leads me to the database manipulation as only way to update/change?
If there is a filter and search bar just remove it
