We struggled quite a bit with image management in odoo, as the import process is quite complex with variants involved, and as the product form interface is cumbersome, we developed an easy drag-and-drop interface to upload, remove, switch, re-order images on products.  It's a multi-product view so you can do many products at once with a treeview that allows drag-and-drop image management.
