I've searched google and forums but can't seem to find the answer even though it is listed as a feature in Odoo.

For example, we have a customer that attends trade shows and wants to track the costs of those trade shows and map them back to a campaign so that the cost of lead acquisition can be calculated.  I feel I must be overlooking something.

Any thoughts here on how to accomplish this.

Have you considered using the Analytic Accounting feature?  https://www.odoo.com/documentation/user/13.0/accounting/others/analytic/usage.html

Perhaps try using a Project for each Trade Show and then tracking time invested into the Trade Show, the various expenses associated with the Trade Show, and then associating Customer invoices with the Trade Show project that generated them. Then you should be able to generate a P&L for each Trade Show project (in theory). 

You may be able to accomplish directly with Analytic Accounts without the use of Projects and Timesheets, but using Projects would bring everything about a Trade Show together in one place.

Just a thought.
