I am very interested in trying the OpenERP website builder and eCommerce modules. I plan on deploying OpenERP 7 soon and I'm not sure if I will be able to add the OpenERP website builder in the future. Any information on this would be helpful.

I'd suggest that you start planning your migration from v7 to trunk now as it can take very long to do a complete migration. I've just done doing the transfer and will be setting up the website and ecommerce modules soon

Everything OpenERP offers is available EITHER online, or hosted in your own environment.

The website builder has already been merged into trunk (what will become version 8 mid year) and can be tested today.

It is the sixth branch down at http://runbot.openerp.com/

This means that if you want to start using v7 on premise today, you will not have access to the CMS/ecommerce feature now but you will be able to upgrade to v8 when it gets released and have access to CMS/ecommerce at that time (with OpenERP Enterprise).
