In Odoo v10 I found the inventory per category option but I didn't find it in the v8 (and I must complete my project in v8 so don't tell to use the v10 please)

There are some menus in Odoo that are not available unless the current user is a member of the Technical Features groups. Navigate to Settings --> Users --> Users and open the record representing the current user. Check that the Technical Features checkbox is checked Once you will do this, you will be able to see it. Thanks.
