Hi,
1- To view the stock as of the date.
There is a default 'Inventory at the Date' Report.
Report
2- Product movement.
- Inventory > Reporting > Move History.
From there, we can use the filter to get the report.
Can add the date filter.

Perhaps, this module - https://apps.odoo.com/apps/modules/18.0/product_stock_balance - might also be helpful. It lets check inventory levels, including specific dates, right from a product form and from a sales line.
