Hello Mathilde,
I don't have specific experience with Elementor but have done things with similar form submits.
Within Odoo you will need to create a controller (https://www.odoo.com/documentation/14.0/reference/http.html), and deal with the parameters sent from the Elementor form, for example, create a contact and assign a tag on endpoint call.
Then Elementor this document suggests adding the relevant webhook you have created in the previous step (https://www.odoo.com/documentation/14.0/reference/http.html). In the section "Use Zapier To Connect Your Form To Any Of Thousands Of Other Services".
