How can I enable or disable the "fancy" layout of notes ?

Go into Settings / General Settings. Under Notes, you have an option Use fancy layouts for notes that is enabled by default and that controls the fancy display of notes.

I think you have to add a sale.order.line of type "fancy note", activate timesheets, then upgrade IAP to have access to fancy_loempia, and the option should appear right below the SFU server. Anyway you can always ask Xavier Bol, he is the master of fancy todo task notes order timesheet server planning lines.

You are right the fancy notes option is not present in Odoo 17.0 and the instructions of Thibault no longer works.
