How I limit that in a sales order in the sales module only the limit of products that I want can be sold, I want to put a sales limit on the products, a specific product can be sold only the amount that I assign.

Hi,
This could be a workaround. You can create a specific location in your Odoo warehouse from where all the sale related pickings will check for availability of products. You can create an internal transfer to this location for all the products that you want to sell on that day. This way, you can limit the products and its qty to be sold.
