i am stuck as to how to setup the checkout page so that someone can checkout their item without completing a payment. Many of my customers will pay me directly when they pickup the item. However, I still want them to be able to initiate the order online. There must be a way.

use the default wire transfer method or create a new one call it COD (cash on delivery), do not link it to any payment provider
this way you will receive the order, fulfill and once paid you can register the payment

Thanks. That is what I thought I had tried - i allowed for the wire transfer option. However, when I test it (and select wire transfer) the order just doesn't seem to be recorded. Actually, there is some feedback to the person online to indicate an sales order has been created (with a number). However, when i go into my orders as an administrator it doesn't show the particular order in the sales order list. Its almost as if it didn't complete or something. Actually, I found that the order is in my list as a quotation record (I suppose I just need to change it from that to order). Now I just have to get the email working such the the orderer receives a confirmation for their order.
Believe the email template "Sales Order: Confirmation Email" is triggered when a quotation is confirmed to sale order
