You can create 2 manufacturing routes and assign to product category.

1. Be sure to turn on "Multi-Step Routes"
Setting > Inventory > Warehouse

2. Set Warehouse Routes
Setting > Inventory > Warehouse > Set Warehouse routes (link)
Or
Inventory > Configuration > Warehouse

Select the warehouse where these routes are applicable and select "Pick components and then manufacture (2 step)" option in the "Manufacture" routes

3. Select these routes to be applicable on product categories
Inventory > Configuration > Routes

Edit both "Manufacture" and "Pick components and then manufacture" routes to include Applicable On "Product Categories"

4. Assign the route to product category
Inventory > Configuration > Product Categories

Select the product category and edit the routes that you wish to assign to that product category.

Hope this helps!

This doesn't seem to answer the question at all. This is just how you set up a product category to be manufactured in 2 steps. How do you set up the 1 step? I have been trying this same thing with no luck. My secondary route will never override the Warehouse default route.

I have been able to do something similar with deliveries. Our warehouse is set up for deliver in 3 steps, but we have been able to override that with a deliver in 2 steps route at the product category level.

I just can't get that same thing to work with manufacturing.

In the product BOM, you would require to provide the route in 'Operation' field in the Miscellaneous tab. Please refer the below post
