You can create multiple projects for an order if the service product per line has a unique 'Project Template'.
You can set the 'Project Template' field on the service Product.
Yes, the service product project templates of the sale order line are all the same. So only one project is generated.

If you want it to be automatic while confirming, I guess you need code customisation to generate project per service line or as per your need.
But manually you can do like
Order-->Project Overview-->Open Project--> Action -->Duplicate & modify your new one.
It will be mapped to this order.
