I want to delete the payslip, it is on Done at the moment, and I need to set it to draft before I can delete it, doesn't anyone know how a non-technical person can get this done, please.

On which version you are looking for?. By default, there is no way to do this, because once a payslip gets confirmed the respective journal entries will become posted. so due to the integrity, from the front end we cannot able to do the same action.
To delete any done state payslip, you need to use PSQL Query, but this way is quite hard to do for non technical person
I can suggest a module, a paid version. But seems its worth for you to do this. Try this module, its already available from V10.0 onwards..
