I'm using Odoo 9 and i want to change the due date after the validation of the invoice when i do a payment in a way that due date takes the payment date . Should i create a new function or i override a function that already exist ? Any idea for help please i blocked with this problem for days now.

Overriding function is always a better way instead of creating new one . Because , the old function may harm the functional flow.
If you want to manually change the date in the invoice :
- you probably need to change the "required" condition of the due date field by inheriting the invoice form view
If you want to automatically set the incoice due date to payment date at payment registration :
- you probably need to to inherit/override the python method called by payment registration button
