How should I proceed step by step to hide tax on sale invoice and purchase invoice and display just the total. I've tried to deactivate the tax but it's still on the sale and purchase invoice.

Hi,
If you are looking to remove the tax from the sale and purchase views, either you can remove it by inheriting and make those tax-related fields invisible.
For the same purpose, there is a module in Odoo10 which is free, you can try the module in v11 also, most probably without any changes or with slight change it will work in Odoo11 too: https://apps.odoo.com/apps/modules/10.0/ar_odoo_hide_tax/
