Is there any way to export a report for an Opportunity in the CRM that includes all available fields and the opportunity history showing changes to the opportunity over time?

Thanks Ivana. I guess what I’m looking for is more of PDF report for an opportunity. not sure if that’s available.

unfortunately no.
Odoo does not keep a history of the same record at different times.
The only "history" you can check is based on the logged messages in the chatter (when e.g. an opportunity stage is updated, ...), and you can export that, but it is not in a good format that you could call it a report.
Hi, editing my answer, so I can include screenshots (not possible in comments).
You have basically 2 ways:
1) Settings > Technical > Messages , filter based on related document model is crm.lead
2) Go to the view of your opportunities, and when you hit export on all, you need to also select all the fields you want to export (not possible to select all, it would be hundreds, maybe thousands of columns for 1 record). For messages, export might look like this:
