Do I just have to uninstall these two Apps ??

Hi Markus,
The huge difference between this version is functionality and features. odoo enterprise contain lots of features while odoo community have less in comparison of enterprise.
if you will uninstall this 2 modules, it mean you are just installing modules which will only gives interface.
so ultimately if you want to migrate, You also have to replace the source code as both version have huge diff.
so complete migration, you have to take new source code of community and you have to remove code of enterprise and replace code of community.
PS :- if you have any database keep backup as both version have major technical change, so might be enterprise db can't work in community.

The only difference between odoo Enterprise and Odoo Community editions is that, Odoo Enterprise has some more additional addons, extending the functionality of the Odoo Community. There is nothing so special about Enterprise edition.
Uninstalling those 2 apps will help to change the User Interface back to that of odoo community edition. (with those menuitems on top).

I checked it an deinstalled web entetprise with latest odoo12 with the result, not able to work at all. Only a db backup could help. So be carefull.

You must be using that database on enterprise version,
what you have to do is: uninstall the web_enterprise module and it will delete all its dependencies
then you can backup it and import it to community version
