When I cancel a delivery order that already has been validated, does that mean I returned it to my stock? I know that there is an option for return delivery orders, but for some reason the user mistaken it and cancelled it. How I can overcome this issue and make sure the products are returned to my stock

A completed Delivery Order (done state) cannot be cancelled. So this scenario of returning product to stock would not occur.
If undelivered orders have been cancelled, you can set it back to draft by filtering on cancelled, duplicating them and 'mark to do'
