Easy solution for you to do is:

* Export all the products with import compatible format
* Keep the ID column and add one column for the currency, set the needed value
* Now import this sheet

By this way, you can update all the products easily.

Other option is to show the field in the list view and enable multi editing for the products and assign the currency for all products at once.

If you are technically skilled, you can do it via server action from the db

* Create a server action
* Set model of server action as ir.actions.server
* Give a name and let the action executes a python function
* env['product.product'].search([]).write({'currency_id': ID_of_Currency})
