I manage my stock of wines under Odoo V8. I would like to have for one artilce a sub-article that would only pick up the year. That would save me from creating a new article a year. Can you help me?

In Odoo-language this is called a "product variant". Please check the user documentation for this term.
Hi... you can create an attribute called as year for products if this is what you meant. It would be a small customization to add year as an attribute to every product
