Is there such a way for custom fields to be added by GUI for non-technical people?

Settings - Customization - Database Structure - Model
To make it available for viewing and input, go to:
v6.0
Administration - Customization - User Interface - Views
v6.1
Settings - Customization - User Interface - Views
You should know a little bit about XML though.
