We have 2 companies in our Odoo 15 database and I would like a ribbon that would stay up when I'm working under one company, but no ribbon when I am under the other.

You can use this OCA module which i believe solve the problem that you are looking for: https://apps.odoo.com/apps/modules/15.0/web_company_color/
This module change navbar colors based in the company logo colors.
