I would like to add a butoon "published" (for add on the web site) on the product category page. (the butoon is the same as the product page)
Like that, i will add the product with the category on the web site.
I don't know the code i should put in XML and Python

I do not understand what you exactly want. Why don't you use the Public Product Category which is published on the website?
because i would like publish the category i selected and with this same button publish the subcategories

You want in category-site a button for every product? For publish/unpublish products, right? I think XML would do this for you.
