The most recent change (16.3) made several changes that are impacting our POS workflow in a very negative way. I'd like to get ahead of any further changes.
Other than Support, where can I be proactive in seeing and commenting on changes to Odoo?

More than what Niyas has said, if you believe that the issue you're experiencing might affect more people, you can create an issue for the Odoo developers to investigate the problem and, if they find it appropriate, fix it.
The link to create the 'issue' is: https://github.com/odoo/odoo/issues. It would be great if you could document it with images from the UI detailing the problems. This will provide the developers with a clearer understanding of the issue and help them address it more effectively.
