When sending an email from the chatter, i.e. from an Invoice. How do you prevent the email to be automatically deleted? As I would like it to show up from Settings > Technical > Emails.

Activate Developer Mode
Go to Settings / Technical / Email / Templates
Open the template / Advanced Settings
and Untick Auto Delete
If you are sending the message from chatter you can see it in
Settings / Technical / Discuss / Messages

I am not using a template, it's for general emails.
Also, Settings > Technical > Messages does not show the emails, just the message that was sent in the chatter. I want to be able to see prevent ALL emails from being deleted.

As Kiran mentions in the response, you can view all the sent emails from
Settings / Technical / Discuss / Messages
Filter messages by Type = 'comment' and subtype = 'discussions'

To stop emails from Chatter auto-deleting, you need to change the email preferences in your Odoo settings. Here are the steps to follow:
Login to your Odoo account and go to the Settings menu.
Under the General Settings tab, scroll down to the Chatter section.
Click on the "Email" sub-tab.
Under "Email Settings", uncheck the option that says "Automatically delete email from discussions."
Click on "Save" to save the changes.
By disabling this option, all emails sent through Chatter will be saved in the system and will not be automatically deleted. This will allow you to access and review them later on.
