If you are logged as Admin, open the menu on the right and disable Onboarding
I am an administrator but the onboarding option is not displayed.
As André already mentioned, this is the option in Odoo 18.
When using Odoo 17.4, you have to go into debug mode and go to Settings -> Technical -> User-Interface -> Tourse - here you can disable specific tours or all tours.

stages of the ingration journey
views
custom views
user-defined filters
visits
studio approval rules
studio approval entiers
I don't see any Tourse in my user interface menu in 17.4
