I really can't figure this one out... Only SOME of the items have this issue.

It seems like Product pricelist item have invalid data.
I guess ending date is out of range.
However if your issue is not fixed yet then kindly share the exact trace back of the error. So that I can look into the error precisely.

Thanks buddy. I’ll look into that. Don’t believe we’ve ever set dates and don’t use product price lists. It’s checked under settings > user > technical and can’t I check it.

Nope... Nothing was attached to a particular item and I couldn't click on any of the boxes in the upper right corner. Active/Archive or anything. No product price list, vendor price list or ordering rules. The only thing it might be attached to would be a customer price list but I couldn't imagine that would create this error because we don't set dates on those price list.

Have you migrated data from other database because seems like any false data is set inside the pricelist.
It will be helpful to if you can share the screenshot or trace of Odoo log
