In OLD API, which is the difference between osv.osv and osv.Model?

I am extending sale class.

As it is coded in OLD API, I guess it is easier to follow the OLD API conventions.

- Should I use osv.osv or osv.Model and why?

Yes, old api convention is applicable for the sale.order object.
