How to correctly set fields for leads when creating leads from incoming emails?

I am using the 'create leads from incoming emails' option. The email message is displayed and stored under 'internal notes' on the leads page. If the message contains phone numbers and contact names (etc.), how do I automatically set the corresponding fields in the leads form straight from the email without having to read the message and set it manually?

(For instance, if a phone number is included, openERP should automatically set the phone number in the 'phone' field on that lead's form view. Right now, it leaves it blank.)
