So if a customer calls in and orders 10 of something the order is finished and its sent off to picking. Picking hasn't gotten to it yet and the customer wants to add an additional item to the same order and change the first item to a qty of 5 instead.

Ideally the order could be unlocked or sent back to the stage before it gets to delivery for these changes.

If your order has already been confirmed, you first have to cancel all related invoices and pickings before you can cancel it. After cancellation you can reset the order to draft and change all required values.

You need admin access to do this as well just to add to that.
